Lime DelightsGF, DF, P, V

This is the most delicious, natural lime sherbet in a bite sized frozen ball.  Make as suggested or skip the last steps and keep it unrolled to enjoy as if actual sherbet!  I’ve doubled the original recipe as they are THAT good – if you’re dubious, half it… but I wouldn’t be dubious 😉   As always, choose organic ingredients wherever possible.

2 limes, washed, then zested, then squeezed of all juice

3 small avocados or 2 large

1 cup unrefined, coconut oil (use low heat on a small saucepan to melt for best mixing)

⅓ cup real maple syrup

1 cup shredded coconut

Use a large food processor to blend the lime zest and juice, avocado, coconut oil and maple syrup.  Blend for a long while until everything is well mixed and creamy. Scoop out into a freezer-safe bowl, cover and freeze for about 1-2 hours until semi-hardened.  If having this as sherbet, pull out of the freezer and enjoy!
